Ingredients:
1/4 C. shortening
1 C. sugar
1 egg
1 C. bran
2 T. water
1 1/2 C. mashed banana
1 1/2 C. flour
1 tsp. salt
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. vanilla
1/2 C. chopped nuts
Preparation:
Cream shortening and sugar.
Add egg and bran and mix well.
In a separate bowl combine water and mashed banana.
Add alternately remaining dry ingredients and banana to the first mixture.
Add vanilla and chopped nuts.
Bake in loaf pan at 350 for 1 hour.
