Cream Puffs

Who is Mrs. Rose Decotiis???

 

Puffs:

  • 1 C. flour

  • 4 eggs

  • 1 C. water

  • 2/3 stick butter

Combine water and butter in sauce pan. Bring to fast

boil.


Add flour all at once, remove from fire, and blend well. Add eggs one at a time.


Place by spoonful on cookie sheet, and bake at 450 for 30 min.


Filling:

  • 2 C. scalded milk

  • 2eggs

  • 1/2C. flour

  • 1/2 tsp. salt

  • 7/8C. sugar

  • 1 tsp. vanilla

Combine sugar, flour, and salt. Add beaten eggs. Add slowly to scalded milk and mix well. Cook in double-boiler until thickened-about 10 min. Cool add 1 tsp. vanilla.


Slice puffs and fill.

Serve topped with whipped cream.
