
Ingredients:
1 med. eggplant
1/2 tsp. garlic powder
1 tsp. salt
pinch oregano
1/4 C. olive oil
1 T. vinegar
Preparation:
Slice egg plant lengthwise into 1/2" pieces. Arrange in a large shallow roasting pan and brush with mixture made by combining remaining ingredients.
Place 2" below broiler, brown, turn and brush with rest of oil mixture, and brown the other side.
